Emissions per kilogram, by meat

The footprint is the weight of meat times an emission factor from life-cycle studies (Poore & Nemecek, 2018). Beef and lamb dominate because ruminants belch methane, a gas about 28 times stronger than CO2 over a century.

Beef and lamb are in a class of their own

Per kilogram, beef emits roughly four times what chicken does. The gap is the single most useful thing this number tells you.

All values are per kilogram of food, global medians. Beef also drives most tropical deforestation, which the carbon figure only partly captures.

What actually moves your footprint

  • Swap beef for chicken. Same protein, about a quarter of the emissions and water.
  • Frequency beats sourcing. A meat-free day or two a week outweighs choosing grass-fed over feedlot beef.
  • Cheese counts. It sits near beef; plain milk is far lower at about 3 kg CO2e per kg.
  • Processed plant meat is fine, not ideal. Beyond-style burgers beat beef but emit more than lentils or tofu.

Common questions

Which meat has the highest carbon footprint?

Beef, at about 27 kg of CO2-equivalent per kilogram, followed closely by lamb at 24. Both come from ruminant animals that produce methane while digesting, so they sit far above pork and chicken.

How much lower is chicken than beef?

Chicken is roughly 6.9 kg CO2e per kg, about a quarter of beef. Switching a kilogram of beef to chicken cuts the emissions by around 74 percent.

Does grass-fed or local beef fix the problem?

Better farming can trim beef emissions by maybe 20 to 30 percent, but even the cleanest beef still emits far more than chicken or plant protein. Eating less beef matters more than sourcing it differently, and transport is a small share of the total.
